Lemon Garlic Roasted Cauliflower

Ingredients

  • 2 pounds cauliflower florets about 2 heads
  • ¼ cup extra virgin olive oil
  • 1 tablespoon garlic minced
  • 4 tablespoons fresh lemon juice 1 lemon = about 4 T juice
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper

Instructions

  • Preheat oven to 375 degrees.
  • Spread cauliflower florets in roasting pan.
  • In separate bowl or measuring cup, mix remaining ingredients. Drizzle on cauliflower; stir to coat evenly.
  • Bake 20 minutes. Stir. Bake another 20 minutes or until cauliflower begins to brown.
  • Serve warm. Enjoy!
