Lemon garlic roasted cauliflower is easily one of my favorite side dishes for so many reasons. The flavors are amazing. It's super easy to throw together and clean up, because it all happens on one sheet pan.
And if you start munching on it raw, it may never see the oven. So. So. Good.

It's been a year of this, and I still don't have a routine that makes me feel ultra productive. I mean, I haven't been a completely useless slug. I've had spurts. The bedroom got painted, the laundry room reorganized, clothes weeded and sorted, messy desk got tackled (a couple times!), and this blog got a few things spiffed up.
However, a routine eluded me. I've never been one for strict discipline, but I honestly thought the year of quarantine was my big shot at it.
Feeling the Overwhelm
It doesn't even make sense to have so much more time at home and feel overwhelmed, but here we are. Still. The Overwhelm has been a giant time suck at times. Anyone else feel that, too? Gosh, I hope it's not just me.
That's where dishes like this come into play. The flavors are uplifting and bright. The ingredients take a ho-hum vegetable and give it life.
It's super easy to pull together. Like, very little hands-on time. And if you buy that 2-pound bag of already cut florets, the prep time is around three minutes. WHOA.
As we head into the second year of struggling to get COVID behind us, this lemon garlic roasted cauliflower recipe helps to keep things light.

Ingredients
- 2 pounds cauliflower florets about 2 heads
- ¼ cup extra virgin olive oil
- 1 tablespoon garlic minced
- 4 tablespoons fresh lemon juice 1 lemon = about 4 T juice
- 1 teaspoon fine sea salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 375 degrees.
- Spread cauliflower florets in roasting pan.
- In separate bowl or measuring cup, mix remaining ingredients. Drizzle on cauliflower; stir to coat evenly.
- Bake 20 minutes. Stir. Bake another 20 minutes or until cauliflower begins to brown.
- Serve warm. Enjoy!
